Do we know yet if the baby is a boy or girl?
I have been watching my calories to keep my weight down for a while too, so learning to make my favorites in lower calories ways is a big part of making my diet something I can stick to long term. Here are some suggestions on keeping the fat content down that I have had very good luck with.
If you like fries try some of the frozen ones that you bake, not fry. With the exception of the curly fries almost all of those have way less fat then you would expect. Still have them with salt, ketchup, chilli or low fat cheese sauce (I can give you a recipe for this too if you want it) how ever you normally eat your fries. Do pay attention to serving sizes.
Pizza
Crust
Olive oil spray 1 cup warm water (105°-115°F) 1 package (1/4 ounce) active dry yeast 2 teaspoons sugar 1/2 cups + 4 tablespoons unbleached flour + additional for work surface 3/4 cup bread flour 2 teaspoons salt
Lightly mist a mixing bowl with oil spray. Set aside.
In a small bowl, combine the water, yeast, and sugar. Whisk until the yeast is dissolved.
In the bowl of a food processor fitted with the dough blade, or in a mixing bowl, combine 1 1/2 cups unbleached flour, the bread flour, and salt. Pulse several times or stir with a wooden spoon to mix. When the yeast mixture starts to bubble, add It to the bowl. Process or stir for about 1 minute, or until a sticky ball forms. If the mixture is too sticky, add up to 4 tablespoons unbleached flour, 1 tablespoon at a time. Process or stir until a smooth ball forms. Turn onto a lightly floured work surface. Knead by hand several times, until the dough is smooth and elastic. Place the dough in the reserved bowl. Lightly mist the dough with oil spray. Cover the bowl tightly with plastic wrap. Set aside in a warm place. Allow it to rise for about 1 hour, or until doubled in size.
Sauce
3/4 cup canned crushed tomatoes 1/2 tablespoons tomato paste 1 tablespoon + 1 teaspoon sugar 1 teaspoon dried oregano leaves 1/2 teaspoon garlic powder
In a bowl, combine the crushed tomatoes and tomato paste. Whisk until smooth. Add the sugar, oregano, garlic powder, and pepper. Stir to blend well. Store in an airtight plastic container for up to 5 days.
Putting it all togegher.
Roll out the dough after it has risen. The easiest way to get a round shape is to rest bowl face down on it after it is all rolled out then cut away the access. Let the dough rise again for another 20 minutes. Spread the sauce around to about ¾ inch away from the edges. Add topping and 5 ounces of shredded mozzarella. The author recommends Sorrento Reduced fat. Add the toppings you want. Bake at 450 degrees for 12 to 16 minutes.
Topping suggestions
If you like veggies on your pizza, go for it. Veggies tend to have a high water content, so you might want to steam them first to draw some of the water out of them.
As for meats, use the leanest cuts you can get your hands on. 96% lean ground beef (available at super walmarts and trader joes). If you like pepperoni, try the hormel Turkey pepperoni. 16 slices is about 80 calories only 35 from fat. This is way less then regular.
Sweets
Cakes - At first I tried this with cake mixes -
6 oz vanilla yogurt instead of oil equivalent amount egg whites instead of whole eggs (most of the fat is in the yolks) water as suggested
These came out good
I modified from scratch recipes with similar substitutions.
Cookies
Replace butter with 1/2 quantity of light butter plus half fat free cream cheese (also works for frosting recipes)
Example Recipe calls for 1/2 cup butter use 1/4 cup fat free cream cheese and 1/4 cup light butter. (75% less fat)
Eggs - all whites no yolks again
Pies
Crust - for that pizza recipe make the following changes -
1 tablespoon sugar instead of 2 teaspoons no salt
Then you can roll that out and put it in a pie pan instead of something that is mostly fat

Well I just got off the phone with her. She is doing OK but will be spending quite a bit of time in the hospital between now and the time when their daughter is born. So she can remain as healthy as possible. She needs all the quiet and calm that the hospital can provide.
